People ask me why I drink Shakeology and the answer is simple....because I want to. 
Taking care of ones self comes in many different forms including getting the right amount of nutrition into the body. 
Now, I don't have the best eating habits as I tend to go all day without eating and than feast at dinner. I know it's bad for my health. I have tried to change this but it's seriously a bad habit that comes back like an old stinky sock.
Drinking my shake during the day helps me get some nutrients into my body before I eat whole food. I don't feel so sick when I do eat because there's superfoods already in my system. 
There's many reason to drink this shake and that's one of mine.

Holiday parties, you can bring something healthy! This salad turned out so good, and so festive 🎊
.
Salad:
1 small bag spinach 
2-3 cups cooked couscous
1/2 red onion sliced small
1 cup chopped pecans
3 cups cooked butternut squash
1/2 cup dried cranberries 
1 small Fuji apple chopped
.
Salad Dressing:
1/3 cup olive oil
1 Tbsp Dijon mustard
2 Tbsp honey
1/4 tsp garlic powder
3 Tbsp orange juice 
Salt and pepper
.
First, heat oven to 425 and placed diced butternut squash on oiled pan and bake for about 30 minutes. Remove and cool. Cook couscous according to package (I use entire package of the Trader Joe’s one). Let cool. .
Add all toppings to spinach in a bowl, add the couscous and the squash, and mix together. Serve immediately with salad dressing, or serve dressing on the side to prevent it getting soggy! .

1. Make syrup by combining honey, water and mint leaves in a small saucepan over medium heat.
until honey and water are well combined

2. remove from heat and let stand for 30 minutes.

3. Remove mint leaves and chill.

4. Place strawberries, syrup, lime zest and lime juice in a blender along with a few ice cubes.
Blend until smooth

5.Serve in glasses garnished with mint and strawberries

Trial and error has been one of my best teachers. I've fucked up my diets and workouts and fallen off for weeks. I've also had months where i eat well and nail every workout. This back and forth has shown me how easy it is to fall off and on again. What it's really shown me is what happens when I quit. I want to see what happens now when I don't quit. What's on the other side of that threshold, who can I really become?

My all time favourite comfort food is basically anything tomato based, tomato soup, pasta with tomato sauce, tomato based curry and this tummy warming bulgur. 🍅 .
Onion, garlic, @muirglen crushed tomatoes, @bobsredmill bulgur, veg stock and frozen spinach. Getting through the freezing cold winter one tomato recipe at a time! 🙃

Thanks @yupitsvegan Creamy Vegan Cucumber Salad with Chickpeas and Fresh Dill Ingredients --'For the vegan cashew-pine nut "mayonnaise":2 tbsp raw cashews soaked for at least 2 hours in water, then drained2 tbsp toasted pine nuts soaked for at least 2 hours in water, then drained1/2 tbsp brown rice syrup (see notes for substitutions)1 and 1/2 tbsp fresh lemon juice1 small cucumber peeledsalt and pepper to taste1-2 tsp water (or as needed to blend) --- For the vegan cucumber salad:4 and 1/2 cups sliced cucumber (for me this was about 4 medium-sized cucumbers)sea salt2 cups cooked chickpeas (1 can), rinsed, drained and patted dry (to keep salad raw, use sprouted chickpeas or omit)1/4 cups chopped red onion1/4 cups loosely packed chopped fresh dill plus more to tastesalt and pepper to tastesmoked paprika to finish -Instructions For prepping the cucumbers: Place the cucumbers in a colander and toss with salt. Let them drain, stirring every 10 minutes or so, for at least half an hour. For optimal results you can even do this in the fridge overnight. Rinse the salt off of the cucumbers and dry them by thoroughly patting them down, or spinning them in your salad spinner. For the vegan cashew-pine nut "mayonnaise": Combine all ingredients in a blender or food processor, stopping to scrape down the sides as needed. Add only enough water to blend everything smoothly. If you have a high-speed blender you may not need any. Adjust seasoning and sweetness to taste. -To assemble the vegan cucumber salad: Soak the chopped raw red onions in a small bowl of tap water for 5 to 10 minutes, and then drain. (This is to temper the aggressive raw red onion flavor a little bit.) Combine the cucumber, chickpeas, red onion, and dill in a bowl. Fold in the cashew-pine nut "mayonnaise". Taste for seasoning and add salt/pepper/additional dill as needed. 👉🏻 2 eggs whites 🥚.
👉🏻 5  tablespoons of flour (you can choose whichever). I used almond flour 🥜.
👉🏻 1  garlic clove (minced or pressed).
👉🏻 1 teaspoon of dried oregano.
👉🏻 1 teaspoon of dried onion.
🌵 make sure to squeeze the zucchini with a rag to get out all the water, then mix all the ingredients and put them in a pan using PAN spray until they were well cooked ✅.

Simple, balanced meals are sometimes the best ones 😌 Garlicky sautéed spinach (TBH this is like almost an entire bunch of spinach...it always shrinks so much!) + arugula + roasted butternut squash (@primalpalate pumpkin pie spice, salt and @chosenfoods avo oil) + avocado + a @vitalfarms soft boiled egg 🤤 All drizzled with olive oil and Trader Joe’s everything but the bagel seasoning. Stay warm my east coast friends! ⛄️

{December 13th} Happy Wednesday! Oh my goodness, only 12 sleeps to Christmas — it’s time to get focused! 🛍⏭🎁 I just have to finish up oneee last paper 👩🏼‍💻 today, and my semester is complete! Just in the nick of time to get cracking on that list 📝🎄of what I’ll be putting underneath the tree! I’d say I’m like, halfway-ish there though, but anyways... ☝🏻breakfast clearly didn’t require much brain power, but always delicious! Two slices of Multigrain Toast 🍞 topped with 1/2 Avocado 🥑 + @jacobsensaltco Sea Salt + Mixed Greens 🌿 + a @vitalfarms 🍳, with some Organic Berries 🍓 + Coffee ☕️, and now I’ve obviously got some work to do! 📚 Have a loverly day, friends!
